Coconut Ice Cream

Ingredients
· 4 cups of water
· 7 individual tea bags
· 1 cup sugar
· 1 can (12oz.) frozen lemonade concentrate, partially thawed
· Chilled apricot nectar to taste
· 4 cups cold water
· Ice cubes
· Mint sprigs
Method
In a saucepan, bring four cups water to a boil then remove from heat. Add tea bags to it; steep, covered, for about fiveminutes then discard the tea bags. Stir in sugar until dissolved; cool slightly. Transfer to a pitcher and cool completely. Add lemonade concentrate and nectar to the tea; stir in cold water. Serve over ice with mint.
