Chilli Garlic Okra

Chilli Garlic Okra
Ingredients

· 25 okras
· ½ tsp pepper powder
· 2tbsp corn flour
· Salt to taste

For sauce
· ½ red bell pepper, cubed
· ½ green bell pepper, cubed
· ¼ cup spring onion whites, chopped
· 4-6 garlic cloves, crushed
· 2tsp soy sauce
· 2tbsp tomato sauce
· ½ tsp pepper powder
· Salt to taste
· Sesame oil
· 3tbsp spring onion greens, chopped

Method
Wash and pat dry the okras thoroughly. Cut into one-fourth-inch pieces. Take the chopped okra in a mixing bowl. Add corn flour, pepper powder and some salt, and toss well. Heat oil in a wok and shallow fry okra in batches on low flame until crispy then remove the fried okra on to a kitchen towel. In the same oil, add chopped spring onion whites and sauté for a minute then add crushed garlic and continue sautéing well. Add chopped bell peppers and sauté well for two more minutes. Add tomato sauce, soy sauce, pepper powder and salt, and mix well, cooking for a few minutes on medium flame. Once the sauce is well cooked, add the fried okras and toss well. Toss on high flame for a minute or two. Remove from flame and serve garnished with spring onion greens.
