Lamb Kebabs
Ingredients
• 80g unsalted butter
• Cocoa powder, (for dusting)
• 250g dark chocolate
• 25g milk chocolate
• 4 large eggs, (separated)
• 50g caster sugar
• 100g flour
• 1tbsp vanilla extract
• Pinch of salt

Method
Preheat oven to 180 degrees Fahrenheit. Butter the inside of a 26cm cake tin. Dust lightly with cocoa powder. Wrap the outside of the tin with aluminium foil. Melt the dark and milk chocolates then allow to cool. In another bowl, beat egg yolks and sugar until very thick and pale. Stir in flour, vanilla and salt. Now add the chocolate mix and stir. Whisk egg whites in a large bowl until they form soft peaks. Mix a dollop of whisked egg white into chocolate mix before folding in the remaining mixture. Pour cake batter into prepared tin and place in a deep roasting tin. Pour hot water into the roasting tin until it comes about 2.5cm up the side of the cake tin. Bake for an hour. Allow cake to cool to room temperature. Gently peel off the foil and remove from the tin. Top with chocolate icing if desired. Garnish with blackberries.
