INGREDIENTS
· 600g potato
· 3tbsp poppy seeds
· 4tbsp oil
· 1tsp salt
· ¼ tsp turmeric powder
· ½ tsp kalaunji
· 2 green chillies


METHOD
Cut peeled potatoes in medium sized cubes. Make a paste of poppy seeds and green chillies. Heat oil in a pan and add kalaunji and potatoes with turmeric powder and stir to mix well. Add salt and cover the pan with a lid. Allow to cook for a few minutes or so, take out the lid, stir and roast for a few more minutes. Add paste of poppy seed and green chillies. Stir and mix properly and allow to cook till almost dry, then add sugar. If you prefer some gravy then add ½ cup water – stir and allow to boil. Taste for salt and spice and the dish is ready to serve. Alloo Posto is a traditional Bengali dish that goes equally well with rice, chapaati and paraatha.
