Fresh, seasonal fruit can be quickly and easily transformed into luscious desserts. Pick from a bushel of favourites, including mangoes, plums, apples, watermelons, bananas and more
• 3/4 cup sugar
• 1/4 tsp salt
• 3 pints frozen blueberries, (approximately 6 cups)
• 3tbsp fresh lemon juice
In a saucepan, bring sugar and one cup water to a boil. Add salt and simmer for two minutes. Transfer sugar syrup to a metal bowl and let it cool to room temperature. In a blender, puree sugar syrup, blueberries, and lemon juice. Strain and discard seeds and skin. Cover and chill sorbet mixture for at least thirty minutes and up to overnight. Transfer to a freezer-safe dish, cover, and freeze until hard, for at least one hour and up to overnight.
