• 4 spring onions, (finely chopped)
• 4 eggs, (beaten)
• 3 roasted red peppers, (sliced)
1 • Cucumber, (sliced)
• Sausages or mushrooms, (optional)
• 4 flour tortillas, (warmed)
• Chilli sauce, (to serve)
Cook the spring onions in a knob of butter in a non-stick frying pan until soft. Add the eggs and scramble softly. Divide the eggs, peppers and cucumber between the warm tortillas. Roll up. Serve with chilli sauce.
