Coconut Ice Cream

Ingredients
· 100g self-rising flour
· 25g caster sugar
· A pinch of salt
· 25g unsalted butter, cubed
· 3tbsp milk, plus extra to brush
· Icing sugar, to dust
Method
Preheat the oven at 220ºC. Grease and flour a baking sheet. Sift flour, sugar and salt into a bowl then rub in butter until the mixture resembles breadcrumbs. Mix in milk to form a soft dough. Turn out on a floured board and knead gently before patting out in half-inch thickness. Cut into rounds using a 1-inch pastry cutter and place on the prepared baking sheet. Brush with milk and bake for eight to 10 minutes until well-risen and golden brown. Once cool, dust with icing sugar and serve with jam, cream and butter.
