Classic Blueberry Pancakes

Ingredients

· Pancake mix

· 125g blueberries

· 250g maple flavour syrup

· ½ tbsp sugar

· 1 medium egg

· 250ml cold water

Method

Place half a pack of blueberries in a pan and add sugar. Heat until blueberries are soft and the sugar has dissolved. To make pancakes, add one medium egg and cold water then whisk until smooth, and transfer the mixture to a jug. Lightly oil a medium non-stick frying pan and heat until very hot. Pour enough batter to thinly coat the base of the pan. Cook for a minute or two on medium heat until golden brown. Turn over and cook for a further minute or two. Place pancakes on a plate and spoon over the blueberries and drizzle with maple syrup. Add a spoonful of sour cream if desired, and enjoy.
