FRIED MILK

Ingredients

· ½ cup granulated sugar

· ½ cup cornstarch

· ¼ teaspoon ground nutmeg

· 3 cups milk

· 1 tablespoon butter or margarine

· ¼ teaspoon grated lemon, rind of

· 2 eggs, well beaten

· • cup plain breadcrumbs

· Vegetable oil

· • cup powdered sugar (optional)

Method

Mix granulated sugar, cornstarch and nutmeg in a saucepan. Gradually stir in milk. Heat to boiling over medium heat, stirring constantly. Stir in butter and lemon peel. Spread evenly in ungreased square baking dish. Refrigerate uncovered at least three hours until firm. Dip custard squares into eggs, then coat with bread crumbs. Heat oil (1 to ½ inches) to 225°C; fry two or three squares at a time in oil for two minutes or until light brown.
