Ingredients

· 1 cup whipping cream

· 2 tablespoons sugar

Strawberry Soda:

· 2 packs frozen strawberries

· 1 cup sugar

· ¼ cup lime juice

· 2 cups chilled carbonated water

To Assemble:

· 4 cups vanilla ice cream

· Sliced fresh strawberries

Method

In a bowl, beat cream until it begins to thicken. Add confectioners’ sugar and beat until soft peaks form. Refrigerate the mixture until serving. Place frozen strawberries, sugar and lime juice in a blender; cover and process until pureed. Press through a fine-mesh strainer into a pitcher and discard seeds. Stir in the carbonated water. Divide ice cream among glasses. Pour strawberry soda over ice cream. Top them with whipped cream and fresh strawberries; serve immediately.
