Thai Mango Sticky Rice Dessert

Ingredients

· 1 cup Thai sweet rice

· 1½ cups water

· 4-5 tablespoons brown sugar

· ¼ salt

· 1 can coconut milk

· 1-2 ripe mangos

Method

Soak rice in one cup water for 30 minutes. Do not drain the rice. Add ½ cup water, ½ can coconut milk, salt and one tablespoon brown sugar, stir well. Bring to boil and partially cover with a lid. Reduce heat to medium-low and simmer until coconut water has been absorbed by the rice. Turn off the heat and allow it to sit for 10 minutes. To make the sauce: warm the rest of the can of coconut milk over medium-low heat. Add three tablespoons of brown sugar and stir it to dissolve. Prepare mango by cutting it into bite-size pieces. Scoop some warm rice into a serving bowl and drizzle sweet coconut sauce over. Arrange mango slices on the rice, drizzle over more sauce and serve.
