Lamb Skewers with Minted Tzatziki

Ingredients

· 800 g lamb mince

· 2 cloves garlic

· 1 chopped onion

· ¼ cup flat-leaf parsley

· 2 teaspoons ground cumin

· 1 teaspoon ground coriander

· 200 g Coles tzatziki dip

· 1/3 cup mint leaves

· 1 clove garlic

· Olive oil spray

· Lemon wedges

Method

Combine mince, garlic, onion, parsley, cumin and coriander in a bowl. Season. Mix until well combined. Form lamb mixture into sausage shapes. Place on a tray. Cover and refrigerate for 30 minutes. Soak 12 small bamboo skewers in cold water. Meanwhile, place tzatziki, mint and garlic in a bowl. Stir to combine. Cover and refrigerate until ready to serve. Thread a skewer through the centre of each lamb sausage. Preheat a greased barbecue plate on medium heat. Spray meat skewers with oil. Barbecue, turning occasionally, for 10 minutes until cooked through. Transfer to a tray, cover with foil and let it rest for five minutes. Serve with minted tzatziki and lemon wedges.
