Salmon with Spicy Cucumber-Pineapple Salsa

· 6 cups watermelon
· Juice of 2 limes
· 1 cup water
· 4 sprigs fresh mint
Add watermelon, lime juice, and water to a blender and blend until very smooth. Strain the liquid through a fine mesh sieve into a pitcher and then, add mint sprigs and refrigerate for about 30 minutes. Add ice to the pitcher, and serve with fresh lime wedges for garnish.
