Chicken Fattoush

Ingredients

· Juice of 2 lemons

· 2 tablespoons olive oil

· ½ lettuce

· 2 tomatoes

· 1 cup parsley

· ½ cucumber

· 200 g cooked chicken pieces

· 2 spring onions

· 2 pitta breads

· Salt & pepper to taste

Method

Pour the lemon juice into a bowl and whisk while you slowly add the oil. When all the oil has been added and the mixture starts to thicken, season. Add the chopped lettuce, tomatoes, parsley, cucumber, chicken pieces and spring onions, and stir well to coat the salad in the dressing. Put the pitta breads in the toaster until crisp and golden, then chop into chunks. Scatter the toasted pitta pieces over the salad and sprinkle over salt and black pepper. Serve straight away.
