Salmon with Spicy Cucumber-Pineapple Salsa

· 650 g prawns
· 1 cup olive oil
· 50 g unsalted butter
· 4 garlic cloves
· 1 teaspoon red chilli
· ¼ teaspoon paprika
· ½ cup parsley
· ½ lemon juice
· 2 pinches salt
· 2 pinches black pepper
Preheat the oven to 200°C. Line cast iron pots with prawns and squeeze lemon juice over. Then, in a frying pan, heat the oil. Sauté the garlic, and while doing so, add crushed red chillies, paprika, chopped parsley, salt and pepper. Mix well and allow simmering for a few minutes. Pour garlic sauce over the prawns and place lids on pots. Now, place them in the oven for a maximum of 15 minutes. Serve warm with crusty bread rolls.
