Coconut Ice Cream

· 1 tub mascarpone
· 1 tablespoon icing sugar
· 1 tablespoon vanilla
· Butter for frying
· Chocolate-covered coffee beans
· For Coffee Pancakes
· 225 g flour
· 1 tablespoon baking powder
· 2 teaspoons espresso powder
· 2 eggs
· 25 g butter
· 200 ml whole milk
Put the flour, baking powder and espresso powder in a bowl and stir. In another bowl, whisk together eggs, melted butter and milk. Gradually stir into the dry mix to make a batter. Leave to sit.
To make the mocha syrup, put sugar, cocoa powder and espresso powder in a pan with water and heat, whisking, until glossy. Mix the mascarpone with the icing sugar and vanilla. Heat a non-stick pan and brush it with butter. Pour batter into the pan to make pancakes. Cook until golden on both sides. Remove to a plate. To serve, make a pancake tower (putting a dollop of mascarpone between each one) and drizzle with the mocha syrup. Add a few chocolate covered coffee beans to decorate.
