Chilli Garlic Sauce

· 6 cloves garlic, finely chopped

· 10 red chillies, finely chopped

· ¼ cup rice vinegar

· 1tbsp sugar

· 3tbsp sesame oil

· Salt to taste


To make the chilli garlic sauce, blend all the ingredients in the blender until you get an almost smooth paste. Adjust the salt and vinegar to suit your taste (vinegar and salt act as preservatives). Store the sauce in a glass jar and allow it to rest for about a day or two, so the flavours get blended well. You can refrigerate the sauce after that for about a month.
