Orange Dream Bars

· 1 cup unsalted butter

· 2 cups all-purpose flour

· ½ cup granulated sugar

· ¼ tsp salt

For filling:

· ½ cup freshly squeezed orange juice

· 1tsp orange zest

· 1½ cups granulated sugar

· ¼ cup all-purpose flour

· ½ tsp baking powder

· 4 large eggs

· Powdered sugar, for topping


Preheat oven to 170°C. Line a 9×13-inch pan with foil or parchment paper and spray with non-stick cooking spray. Beat butter with a mixer until creamy then add flour, sugar and salt, and beat until a dough forms. Press the crust into the bottom of the prepared pan and bake for 18 minutes. A few minutes before the crust comes out of the oven, prepare the filling. Blend together all filling ingredients for a few seconds to almost a minute until smooth, depending on your blender. Carefully pour the filling evenly over hot crust. Return to the oven and bake until the top is no longer jiggly, for about 20-23 minutes. Cool completely before dusting it with powdered sugar and slicing into bars.
