Yogurt Pancakes

· 1 egg, beaten
· 150g Greek yogurt
· 175ml milk
· 1tbsp melted butter, plus extra to grease
· 1tsp caster sugar
· ½ tsp salt
· 150g wholemeal flour
To serve:
· Mixed berries or any fruit of choice, sliced
· Greek yogurt
· Butter
· Runny honey, to drizzle

Whisk egg, yogurt, milk and melted butter together. In a separate bowl, combine sugar, salt and flour. Add the yogurt mixture to the dry ingredients and beat until smooth. Lightly grease a frying pan and warm on a medium heat. Use two tablespoons of the batter for each pancake and cook for two minutes on each side until golden brown. Serve the pancakes with fruits and honey.
