Strawberry Salad

· 130g walnuts
· 1tbsp olive oil
· 200g torn spinach leaves
· 400g soft goat cheese
· Lime juice
· 1tsp dried parsley
· 100ml olive oil
· Salt and black pepper to taste


Sauté the walnuts in olive oil in a large pan or wok until slightly charred. Cool, then chop roughly. Put the spinach leaves, walnuts and sliced strawberries into a large bowl. You can add additional vegetables and grilled chicken in at this point, if you like. Gently break the goat’s cheese and sprinkle over the salad. For the dressing, whisk lime juice, parsley and olive oil together. Season with salt and black pepper, pour over salad, gently toss and serve.
