Sausage & Ratatouille Casserole

Ingredients

· 8-pack sausages

· 400g potatoes, diced

· 400g tomatoes, chopped

· 390g can ratatouille provencale

· 25g fresh flat-leaf parsley, chopped

Method

Place sausages under a preheated grill for about 15 minutes, turning occasionally. Cut into thick slices once cooked. Meanwhile, cook potatoes in boiling water for about 10 minutes until tender, then drain and return to the pan. Add tomatoes and ratatouille, and simmer for about five minutes. Stir in the sausages and cook for about two to three minutes. Sprinkle over the parsley and serve.
