Apple Flapjacks

· 1kg apples, peeled, cored and grated

· 40g sugar

· 150g butter

· 70ml golden syrup

· 200g oats

· Pinch of salt

· Pinch of ground ginger


In a pan, sprinkle the apples with sugar, cover and cook over a gentle heat until they become soft. Add butter and golden syrup, and bring to a gentle simmer. Gently stir in oats, salt and ginger. Pour the mixture into a butter cake tin of 8-inches and bake in the oven at 180°C for 30 minutes. Allow to cool before turning out and serve.
