Turkey Meatballs in Tomato Sauce

For meatballs:

· 1tbsp of melted coconut oil

· 800g turkey breast mince

· 1 onion, finely diced

· 1 small red pepper, finely diced

· 1 clove garlic, minced

· 2tbsp fresh parsley, chopped

· A pinch of salt and fresh pepper

· 2 eggs

For sauce:

· 1 onion, finely chopped

· 2tbsp coconut oil

· 1tsp salt

· 1 crushed garlic clove

· 1tsp dried thyme

· 1tsp of oregano

· 2 cans chopped tomatoes

Method

Preheat oven to 180°C. Place all the meatball ingredients in a medium bowl and mix everything together. Roll into one and a half-inch balls. For the sauce, fry the onion in a little coconut oil and salt. After five minutes, add the rest of the ingredients and cook for 10 minutes until done. Serve hot.
