Asparagus Rolls

· 1x320g sheet ready-rolled all-butter puff pastry

· 120g garlic & herb soft cheese

· 100g fine asparagus spears

· 3 slices of turkey, cut in half lengthways

· 1 egg, beaten

· 1tbsp Parmesan cheese, finely grated


Preheat the oven to 200°C. On a floured surface, cut the pastry into six equal squares. Spread a sixth of the soft cheese diagonally along the centre of each square. Take asparagus spears and wrap them in one of the pieces of turkey. Lay the ham-wrapped asparagus over the soft cheese. Pull the two opposite corners of pastry over the filling and brush the pastry with beaten egg to seal. Repeat with the other squares, then sprinkle the rolls with Parmesan. Bake on a lined baking sheet for 15-20 minutes, until the pastry is crisp and golden. The rolls can be served warm or at room temperature and can be kept in the fridge for up to two days.
