Vegan Mushroom Pizza

· 1 medium-sized pizza base

· Chilli oil, to taste

For sauce:

· 2 medium-sized potatoes

· 1 heaped tsp miso

· 2tbsp nutritional yeast

· 2tbsp olive oil

· 1 garlic clove, grated

· Salt and pepper, to taste

· Handful of fresh basil

For mushrooms:

· Handful of Japanese mushrooms

· 2tbsp olive oil

· ½ tsp dried oregano

· Salt and pepper, to taste

· 1tbsp apple cider or balsamic vinegar


Preheat the oven to 180ºC. Peel the potatoes and grate them into a bowl using the finest setting on a grater. Add the miso, garlic, olive oil, salt and pepper, and mix well. Cover the pizza base with this mixture. Top it with fresh basil. Place the mushrooms into the same bowl with grated potatoes, add the dried oregano, olive oil, vinegar, salt and pepper, and mix well. Place the mushrooms on top of the pizza. Bake in oven for 20-25 minutes until the base is cooked through and crispy. To serve, drizzle with chilli oil.
