Savoury French Toast

· 1 loaf (8oz.) of French bread, cut into ½-inch slices

· 6 large eggs, beaten

· 2 cups 2% milk

· 4tsp Dijon mustard

· ½ tsp salt

· ½ tsp pepper

· ½ cup minced chives, divided

· 1½ cups cheese, shredded and divided


Arrange half of the bread slices in a greased 13x9-inch. baking dish. In a large bowl, combine eggs, milk, mustard, salt, pepper and one-fourth cup chives. Pour half of the egg mixture over the bread; sprinkle with one cup cheese. Layer with remaining bread and egg mixture, and sprinkle with remaining cheese. Cover and refrigerate overnight. Remove from the refrigerator for 30 minutes before baking. Bake, uncovered, at 170°C for 50-55 minutes or until a knife inserted in the centre comes out clean. Let it stand for 10 minutes before cutting. Sprinkle with remaining chives before serving.
