French Toast Casserole

· 1 loaf (1lb.) French bread, cut into 1-inch cubes or slices

· 8 eggs, lightly beaten

· 3 cups 2% milk

· 4tsp sugar

· 1tsp vanilla extract

· ¾ tsp salt


· 2tbsp butter

· 3tbsp sugar

· 2tsp ground cinnamon

· Maple syrup, optional


Place bread in a greased 13x9-inch baking dish. In a large bowl, whisk eggs, milk, sugar, vanilla and salt. Pour over bread. Cover and refrigerate for at least eight hours. Remove from refrigerator for about 30 minutes before baking and dot with butter. Combine sugar and cinnamon; sprinkle over the top. Cover and bake at 170°C for 45-50 minutes or until a knife inserted in the centre comes out clean. Let it stand for about five minutes and serve with maple syrup.
