Salmon with Spicy Cucumber-Pineapple Salsa

· ½ cup butter, cubed
· 2/3 cup packed brown sugar
· ½ cup heavy whipping cream
· ½ tsp ground cinnamon
· ½ tsp ground allspice
· ¼ cup chopped walnuts, optional
· 3 large bananas, sliced
· 12 slices egg bread
· 1½ cups 2% milk
· 3 large eggs
· 1tbsp sugar
· 1tsp vanilla extract
Place butter in a microwave-safe bowl; cover and microwave until melted, for about 30-45 seconds. Stir in brown sugar, cream, cinnamon, allspice and, if desired, walnuts. Add bananas and toss gently to coat. Transfer to a greased 13x9 baking dish. Arrange bread over top, trimming to fit as necessary. Place remaining ingredients in a blender and process just until blended. Pour over the bread. Cover and refrigerate for at least eight hours. Preheat oven to 180°C. Remove French toast from refrigerator while the oven heats. Uncover and bake until a knife inserted in the centre comes out clean, for about 35-40 minutes. Let it stand for around five to 10 minutes. Invert to serve.
