Herbed Hasselback Potatoes

· 1 potato

· 1 clove garlic, sliced

· 2tsp butter, softened

· 2tsp extra virgin olive oil

· ¼ tsp rosemary

· Salt and pepper to taste


Preheat the oven to 220°C. Place the potato flat side down. Start from one end of the potato, cut almost all the way through, at about 3-4mm intervals. Arrange the potato in a baking tray and insert garlic in between the slits. Drizzle some butter and olive oil on top and season with salt, rosemary and freshly ground black pepper. Bake the potato for about 40 minutes, or until the potato turns crispy and the flesh is soft.
