Thai Beef Rolls

· 1½ tbsp lime juice

· 1tbsp sesame oil

· 1tbsp ginger, ground

· 1tbsp garlic, minced

· 2tsp fish sauce

· ¾ tsp sugar

· 4 flour tortillas

· 2 cups lettuce

· 12oz. roast beef, thinly sliced

· ½ cup carrots, matchstick-cut

· ¼ cup mint, chopped


Combine first six ingredients in a small bowl, stirring well with a whisk. Place tortillas on a clean smooth surface; brush lightly with two teaspoons of the juice mixture. Arrange half cup of lettuce on each tortilla and top each with three ounces beef. Combine carrots and mint, and arrange about three tablespoons of the mixture over each serving. Drizzle each with about one tablespoon of remaining juice mixture and roll up. Serve and enjoy fresh.
