Cold Pea Salad

· 16oz. frozen peas (do not thaw)

· 6oz. almonds

· ½ cup green onions, chopped

· 8oz. nuts of choice, chopped

· 2/3 cup mayonnaise

· 2tsp yellow curry powder

· Salt and pepper to taste


In a fine-mesh strainer under cold running water, rinse the almonds to remove the excess salt, if salted, then spread between two paper towel layers and pat dry. Spread on a cutting board and coarsely chop them with a large knife. Combine the salad ingredients in a large bowl; whisk the mayonnaise, curry powder, salt and pepper together until smooth. Add the peas, green onions and nuts of your liking to the bowl. Gently fold the salad into the mayonnaise dressing. Taste and add more salt and pepper, if you like. Refrigerate until ready to serve. Just before serving, stir in the chopped almonds and enjoy.
