Coconut Ice Cream

Ingredients
· ½ onion, cut into small cubes
· 30ml olive oil
· ½ tomato
· 10g mixed veggies
· 4 eggs
· ½ tsp salt
· ¼ tsp black pepper
· Herbs, to garnish
Method
Sauté the onion in olive oil on medium heat until soft. Add tomato and mixed veggies, and cook for about two minutes. Break the eggs into a bowl and season with salt and pepper. Add the vegetables and herbs. Mix until smooth then transfer to a baking dish and bake in the oven at 180°C for around 12 minutes. Remove from the oven, garnish with fresh herbs and serve.
