Coconut Ice Cream

Ingredients
· 75g butter
· 1/3 cup caster sugar
· ½ tsp ground cinnamon
· 2 small firm bananas, halved lengthways
· 2 sheets puff pastry
Method
Preheat oven to 200ºC. Place butter, sugar and cinnamon in a large flame-proof roasting pan over medium heat and stir until butter is melted and mixture is combined and caramelised then turn off the heat. Meanwhile, place two banana halves, cut-side down, onto a pastry sheet. Trim pastry around bananas, following the shape, leaving a 15-cm border around each banana. Wrap pastry around curved banana halves. Repeat with remaining banana halves and pastry sheets.
Carefully place banana halves, cut-side down into the caramel mixture. Then transfer to the oven, bake for 20 minutes or until pastry is golden and cooked through. Stand for five minutes before carefully inverting tatins onto plates. Serve dusted with icing sugar and ice cream.
