Grilled Tropical Fruit with Orange Glaze

· 1tsp finely grated orange rind

· 2tbsp orange juice

· 2tbsp brown sugar

· 1 small pineapple, trimmed, halved, sliced thickly

· 2 medium bananas, quartered

· 1 star fruit, sliced thickly

· ¼ cup fresh mint leaves


To make orange glaze, combine rind, juice and sugar in small saucepan, stir over low heat until sugar dissolves and let it cool. Preheat grill, combine glaze with fruit in a large bowl. Spread fruit mixture onto two foil-lined oven trays. Grill fruit for about five minutes or until light brown. Serve fruit sprinkled with mint.
