Grilled Korean Turkey Roll Ups

· 1/3 cup soy sauce

· Mix of 1tbsp sugar and ½ tbsp rice vinegar

· 1½ tsp sesame oil

· 1 clove garlic, minced

· 1 green onions, minced

· 1/8 tsp five spice powder

· 1lb. turkey cutlets, thinly sliced

· 16 long, thin cucumber slices

· 8 asparagus spears, trimmed and halved

· ½ red pepper, thinly sliced into 16

· 1tsp sesame oil

· ½ tsp salt

· ¼ tsp pepper


Combine first six ingredients in a small bowl then add turkey. Cover and refrigerate for eight to 24 hours. Place turkey onto a cutting board and pat dry. In a medium bowl, mix together cucumber, asparagus, red pepper, sesame oil, salt and pepper. Place four pieces of cucumber, asparagus and red pepper onto the middle of each turkey cutlet. Roll up and secure each cutlet with two toothpicks. Heat grill to 170ºC and oil grates well. Cook turkey, turning occasionally, for about 20 minutes. Serve immediately and enjoy hot.
