Rotisserie Chicken Taco

• 450g shredded rotisserie chicken

• 8 corn tacos shells

For salsa:

• 4 tomatoes, de-seeded, finely chopped

• 1 red onion, finely chopped

• ¼ tsp rapeseed oil

• 2tsp lime juice

• ¼ tsp ground cumin

For guacamole:

• 2 avocados, peeled, roughly chopped

• 4tsp lime juice

• 2 spring onions, finely chopped

• 3tbsp chopped coriander

• Salt and pepper to taste


For guacamole, mash avocado with a fork; gently mix in lime juice, spring onions, coriander and season to taste. For salsa, combine all ingredients and season to taste. Make it fun and tasty by serving chicken, taco shells, guacamole and salsa in separate dishes so everyone can build their own taco.
