Pulled Chicken Roll

• 500g rotisserie chicken

• 200ml bbq sauce

• 4 brioche rolls

• Butter to brush

• 2 radishes

• 2 spring onions

• 50g mayonnaise

• 100g lettuce

• Coriander to garnish


Shred rotisserie chicken and mix with bbq sauce. Brush the rolls with butter and heat in an oven. Thinly slice radish and spring onion in the meanwhile. Heat bbq chicken in a pan. To assemble, slice brioche across the top and spread mayonnaise inside. Shred the lettuce and place inside. Top with bbq chicken and garnish with spring onion, radish and coriander, and enjoy.
