Katlama is a savoury, hot and spicy flatbread and the Pakistani counterpart of the Italian pizza. The dish is especially famous in Punjab, particularly in the historic city of Lahore, where it is served as a popular street snack. It is also served around the world in Pakistani restaurants and is made with dough mixed with chilli powder, garam masala and red food colouring. Small balls of this dough are sprinkled with dal maash, coriander and dried pomegranate seeds, rolled out and then deep fried. Sometimes, prior to the deep frying, it is also covered with chickpea flour paste. In some versions, this flatbread has a similar base as a pizza, made of yeasted dough and topped with spiced minced beef or lamb.
