Warm Plum Cobbler

· 8 ripe black plums, cut into 1/8 slices

· 1¼ cups granulated sugar, divided

· ¼ tsp salt

· 4oz. butter

· 1tsp cinnamon

· 1 cup milk

· 1 cup self-rising flour, sifted

· Vanilla ice cream, to serve


Preheat the oven to 200°F. In a medium bowl, toss plums in half cup of sugar and the salt. Set aside and let it sit until needed. Put butter in a 2-quart baking dish and place it in the oven to melt. Whisk the remaining sugar, cinnamon and milk in a medium bowl. Stir in sifted flour and gently mix just until combined. Carefully pour the batter into baking dish once butter is fully melted. Spoon plums evenly over the top of the batter along with any juices they may have released. Bake for 40-50 minutes, until deep golden brown. Serve with vanilla ice-cream.
