Pomegranate Tea

Ingredients

· 1 large pomegranate, rinsed well and quartered

· 4 cups cold water

· Few sprigs mint (optional)

· Few tbsp honey (optional)


Method

In a small saucepan, bring pomegranate and the water to a boil then reduce heat. Add mint, if using; simmer until fragrant and colourful, for about 15 minutes. Stir in honey, if using, then strain tea, and serve hot.
