PASTINA SOUP

Ingredients

· 8 cups chicken broth

· 1 cup celery, finely chopped

· 1 cup onion, finely chopped

· 1 cup carrot, finely chopped

· 1 potato, finely chopped

· 1 tbsp chicken powder

· 1/2 tsp black pepper

· 1/8 tsp salt

· 1 boneless skinless chicken breast

· 1/2 cup uncooked pastina (tiny star-shaped pasta)

· 1/2 cup freshly grated parmesan cheese

Method

Bring broth to a boil in a large saucepan.

Stir in celery, onions, carrots potato, pepper, salt, chicken bouillon powder and chicken.

Bring to a boil and reduce to simmer for 45 minutes. Remove chicken and chop in tiny pieces. Add pasta and chicken to soup, and cook for 10 minutes.

Spoon into soup bowls and toss the Parmesan cheese. Serve.
