Ingredients

· ¼ cup vegetable oil, plus more if needed

· 2 very large yellow onions, halved and thinly sliced

· 1tsp salt

· 1tsp black pepper

· 6 chicken breast pieces, about ½-inch thick

· 6 burger buns


Method

In a large skillet over medium heat, warm vegetable oil. Add onions and season them with half of the salt and pepper. Toss to mix well and cook until they are soft and well browned, for about 15 minutes. With a slotted spoon, transfer onions to a bowl and set them aside. Preheat the broiler on high. Season chicken with the remaining salt and pepper. Add a little more oil to the pan if needed then raise temperature to medium-high. Add chicken and cook for three to four minutes per side or until they are golden brown. Under the broiler, toast buns on the cut sides only, until lightly brown in colour. On each bun, place one piece of chicken breast and top it with one-sixth of onions. Serve immediately.
