SPANISH HOT CHOCOLATE

Ingredients

· 500ml mineral water

· 50g sugar

· 25g cocoa powder

· 110g dark chocolate – min 70% cocoa

· 40g white chocolate

· 1 teaspoon

cinnamon powder

Method

Place the water and the sugar in a saucepan. Bring to boil, stirring continuously until the sugar is totally melted. Then add the cocoa powder, the cinnamon and whisk everything vigorously so it blends. Break both the dark and the white chocolate into bits. Place the chocolate into a big bowl and start pouring over the blended mix from the saucepan. Do it very slowly, whilst stirring constantly until the chocolate bits melt completely. Pour the resulting bowl mixture back into the saucepan and simmer gently whilst stirring until we have a smooth and thick chocolate ‘sauce’.
