Salmon with Spicy Cucumber-Pineapple Salsa

· 4 slices wholemeal bread
· 1 tomato, sliced, or 2
tbsp ready-made tomato
pasta sauce
· 125g ball mozzarella, drained, patted dry and thinly sliced
· Sliced chicken breast
Toast bread until golden and crisp. Lay tomatoes or sauce over two slices of bread. Top with slices of mozzarella and a slice of grilled chicken. Lay other piece of toast on top, press lightly together. Put one sandwich on a plate, microwave on high for 45 seconds, then repeat for second sandwich.
