Meghan Markle's Zucchini Bolognese

Ingredients

· 1 tablespoon olive oil

· 1 chopped onion

· 5 medium chopped zucchini

· ½ cup water

· Bouillon cube

· ¾ cup rigatoni

· Half lemon juice

· 1 cup grated parmesan

· Red pepper flakes

Method

In a large pot, over medium heat, heat olive oil. Add onion and cook until soft, for about six minutes. Stir in zucchini, water and bouillon cube. Season it with salt and pepper. Reduce heat to low and cover pot. Cook for four hours, stirring often, until the zucchini is falling apart. When the sauce is almost ready, bring a large pot of boiling salted water to a boil. Add rigatoni and cook according to package instructions. Drain. Season the sauce with salt and pepper, and then stir in lemon juice, Parmesan and red pepper flakes. Serve immediately!
