Gajar Halwa

Ingredients

· 1 kg carrot

· 1½ liter milk

· 8 green cardamoms

· 5-7 tablespoons ghee

· 5-7 tablespoons sugar

· 2 tablespoon raisins

· 1 tablespoon shredded almonds

· 2 tablespoons chopped dates

Method

Peel and grate the carrots. Simmer in milk with the cardamom until liquid evaporates. Now heat ghee in a pan and add the carrot mixture. Cook over a gentle flame for about 10-15 minutes. Stir in sugar and continue cooking until the halwa turns in deep reddish colour. Stir in the dried fruit and serve.
