Mediterranean Flatbread

· ½ cup grape tomatoes

· ¼ cup kalamata olives

· ¼ cup marinated artichokes hearts

· ¼ cup roasted red peppers

· 4-5 cloves roasted garlic

· 1 teaspoon lime juice

· 2 teaspoons parsley

· 1 tablespoon olive oil

· ¼ cup feta

· Pre-made pizza dough


In a bowl, combine tomatoes, olives, marinated artichokes, roasted red peppers, garlic, lime juice, and parsley. Toss until well combined and set aside. Preheat oven to 350ºC. Roll the pizza dough out in a rectangle roughly 12 inch. Transfer to an oiled or parchment covered baking tray. Rub the dough with olive oil and sprinkle olive mixture evenly over dough. Follow with feta, starting with a little at first and adding more as desired. Bake for about 12 to 15 minutes until the crust is crisp. Remove, cut, sprinkle with parsley and serve.
