Thai Peanut Chicken Flatbread

· 1 flatbread

· ¾ cup Thai peanut chicken

· ¼ cup shredded mozzarella

· ¼ cup shredded carrots

· ¼ cup green onion

· 1 tablespoon peanuts

· Cilantro for garnish


Preheat your oven to 275ºC. Spray the flatbread with non-stick spray and place the sprayed side down on a pizza pan. Spread the chicken evenly over the flatbread and top it with mozzarella. Bake it for about 10 minutes, or until the cheese is melted and chicken is warm through. Remove from the oven and top it with chopped carrots, green onions, crushed peanuts and cilantro. Serve Immediately.
