Avocado Shrimp Salsa

Ingredients

· ½ kg peeled shrimp

· ¼ teaspoon salt and pepper

· 1 tablespoon olive oil

· Lime juice

· 2 avocados

· ½ cucumber

· 4 tomatoes

· 1 diced onion

· ½ cup cilantro

Method

Season the shrimps lightly with salt and pepper. Place a skillet over medium high heat. Once the pan is hot, add olive oil. Add shrimps and cook for three minutes, turning once halfway. Saute until cooked through and then, remove from the pan. Transfer to a cutting board, coarsely chop and place into a bowl. Squeeze the juice of 3 medium limes over the shrimps, stir and set aside to marinate while you prepare remaining salsa ingredients. Add cucumber, tomatoes and avocados into the bowl with shrimps. Finely dice onion and chop ½ bunch of fresh cilantro. Add to the mixing bowl and stir together all of the ingredients until well combined. Refrigerate in a container for future use. Have with hot sauce and tortilla chips.
