Broccoli Cheesy Bread

Ingredients

· 3 cup riced broccoli

· 1 egg

· 1½ cup mozzarella

· ½ cup grated Parmesan

· 2 cloves garlic

· ½ teaspoon dried oregano

· Salt to taste

· Ground black pepper

· Red pepper flakes

· 2 teaspoon chopped parsley

· Warmed marinara

Method

Preheat oven to 250°C and line a baking sheet with parchment paper. Microwave riced broccoli for one minute to steam. Carefully ring out extra moisture from the broccoli using paper towel or cheese cloth. Transfer broccoli to a bowl and add egg, one cup mozzarella, Parmesan, and minced garlic cloves. Then, season with oregano, salt, and pepper. Transfer dough to the baking sheet and shape into a thin, round crust. Bake until golden and dried out, for about 20 minutes. Top with remaining mozzarella and bake until cheese is melted and crust is crispy, 10 minutes more. Garnish with parsley and pepper flakes. Serve warm with marinara.
